š Apple Muffins spiced with Onguard!

Thereās something so grounding about baking at this time of year! ~The scent of spelt, apple, & OnGuard filling the kitchen ~ autumn/Winter season comfort at it's best. These one-bowl muffins are simple, wholesome, & full of goodness: Ā mineral-rich apple + oats Ā warm, spiced notes from OnGuard Ā soft sweetness from vanilla oil + coconut sugar Ā & that finishing touch of Natureās Divine Bliss cacao paste (or Cacaoāramac for a blonde choc twist ). Perfect for cosy mornings, after school, post-walk snacks, or shared with a cuppa by the fire. Here's the full recipe below ~ šæ Ingredients:
200g spelt flour (wholegrain or white, or a mix)
50g porridge oats
1 ½ tsp baking powder
½ tsp bicarbonate of soda
¼ tsp sea salt
80g coconut sugar (or light brown sugar)
2 flax āeggsā ā (mix 2 tbsp ground flaxseed with 6 tbsp warm water; rest 5ā10 min
until 'gelled')
150g apple purƩe / unsweetened apple sauce
75ml melted coconut oil
2-3 drops dÅTERRA Vanilla essential oil 3-4 drops dÅTERRA OnGuard essential oil šæ (adds a warm, & spiced citrus note)
2 tbsp mylk of choice
Optional: a small chopped apple, a handful of raisins or chopped nuts
š Method:
Preheat oven to 180 °C (160 °C fan) and line a muffin tray with cases.
In a large bowl, whisk together:
flax eggs, apple purĆ©e, oil, dÅTERRA Vanilla, mylk, and dÅTERRA OnGuard until smooth.
Add the dry ingredients straight into the same bowl ā flour, oats, baking powder, bicarb, salt, & coconut sugar.
Fold gently until just combined (donāt overmix).
Stir in any chopped apple, nuts, or raisins if using.
Spoon into muffin cases (about ¾ full)
Bake for 18ā20 minutes, until golden and springy to the touch.
Once baked, while still warm, sprinkle the tops with finely chopped Natureās Divine Bliss cacao
paste or Cacaoāramac for a blonde-chocolate twist ā or both! š

*Always mix essential oils into the wet ingredients first so they disperse evenly
*Freeze any extras for quick, nourishing autumn breakfasts
